Description
fresh, summer side dish
Ingredients
- 2 c (raw) rice of your choice
- 1 c chopped scallions
- 1 large white onion (i used vidala instead)
- 1 1⁄2 c cilantro leaves
- 3 T lime juice
- 2 jalapenos with seeds*
- 2 jalapenos without seeds
- 2 t salt
- 1 T olive oil
Instructions
start cooking rice according to directions blend all other ingredients in blender until smooth serve sauce over or mixed with rice of your choice
*omit the jalapenos to make it mild, and just as good!
