Green Rice

Description

fresh, summer side dish

Ingredients

  • 2 c (raw) rice of your choice
  • 1 c chopped scallions
  • 1 large white onion (i used vidala instead)
  • 1 1⁄2 c cilantro leaves
  • 3 T lime juice
  • 2 jalapenos with seeds*
  • 2 jalapenos without seeds
  • 2 t salt
  • 1 T olive oil

Instructions

start cooking rice according to directions blend all other ingredients in blender until smooth serve sauce over or mixed with rice of your choice

*omit the jalapenos to make it mild, and just as good!

The first of the allium family to be harvested. A fresh bunching onion great added to marinades and salad dressings. My favorite is scallion pancakes! To keep these fresh store in the fridge and use within a week.
